Which day of the week do they sell best?

On US a Gold-rank unit sells for 5.8 times a Silver one, the median across these materials. Anything that raises your share of Gold rank pays off here.

Where do these numbers come from?

From Blizzard's hourly snapshot of every commodity auction in the region. A price is the robust low (what the cheapest quarter of the stock asks), changes compare against daily history, and sales count listings that sold rather than expired. Nothing here guesses drop rates or gold per hour.

Materials come from the game data, not a hand list: everything a gathering profession gathers this expansion, minus what other professions craft. A material is rising or falling past ±5% over seven days, and only when it sells often enough for the move to mean something.
